This new speakeasy at Uptown Bonifacio has fresh oysters and personalized drinks

Salt and Ice, a new sophisticated hub for oysters and booze, recently opened its very first branch in Uptown Bonifacio. If you’re looking for something out of the ordinary for your next barkada night out, this may just be the place for you. 

The heroes of Salt and Ice

At its core, Salt and Ice is a chill spot for fresh oysters and craft cocktails. Its inception began as a passion project for its founder, John-Michael “Mike” Hilton, the President and CEO of food and beverage company Visum Ventures.

He shared, “Salt represents all our fresh oysters [which are] locally sourced, all flown in from Aklan. And that is really the inspiration behind the name ‘Salt’, the first part of [the restaurant’s name], while the ‘Ice’ side is a testament to our passion for craft cocktails.”

The restobar prides itself with drawing inspiration from different cuisines worldwide in creating their menu, offering a journey through their bar bites, mains, and killer desserts.

They have around 8 separate ways to serve their oysters including flavors like Spinach Malunggay, Oysters Kilpatrick, and Oysters Bacon and Cheese. Some of their bestselling main dishes include a showpiece meal — their Tomahawk — a 1.5kg. Australian grass-fed Tomahawk steak served with roasted rosemary potatoes and buttered fresh green beans. For pasta lovers, the Sea Urchin Pasta is a crowd favorite, mixing the flavors of fresh sea urchin, white wine and cream reduction, and salmon roe.

Their cocktail roster is crafted by their award-winning team of bartenders, and are inspired by different global destinations. Their 36th Street drink, which is a blend of Sailor Jerry Rum, Mango, Macadamia, and Milk is an ode to their Uptown Bonifacio address. Their Mr. Janszoon booze, meanwhile, is named after the man who discovered Australia, Dutch navigator Willem Janszoon. 

A personalized experience

Salt and Ice found the perfect spot Uptown Bonifacio for their initial venture. Mike said, “It is pretty much a party hub. We consider ourselves to be a multi-use destination for millennials definitely, but also as a pre-game or pre-dinner or pre-party venue where they come out and they ease into the night by having a few oysters and cocktails.”

Salt and Ice is the first bar concept of Visum Ventures. One of the things that sets them apart from others is their excellent service, including personalizing experiences for their guests.

“The good thing about our staff, especially the cocktail bartenders, is that if you tell them what kind of mood you’re in, if you tell them what kind of spirit you like, they can craft any cocktail for you.”
